Contrà del Tono is an unforgettable seal of Valpolicella Classica. A village of stone and humanity that cannot be forgotten. Production area: Negrar Valley, classic Valpolicella.

Grapes: Corvina gentile, Corvina grossa, Rondinella, Molinara.

Harvest: By hand with positioning of the grapes in suitable containers and immediately sent to crushing.

Pressing: Soft in a horizontal press at low temperature.

Fermentation: Vinification in steel at a controlled temperature and subsequent light cryomaceration with hand punching down.

Refinement: After the red vinification, the wine is aged in steel containers where it remains until March-April. Subsequently, the wine is aged in the bottle for about 4 months before being placed on the market.

Organoleptic characteristics

Wine with ruby red reflections and a nice consistency in the glass. Good verticality of the aromas on the nose with a clear sensation of ripe cherry and berries. Spiciness of black pepper and cloves with a pleasant slightly balsamic sensation of fine herbs, rosemary and thyme. On the palate it is particularly elegant with a frank and sinuous tannin. Good flavor and strong structural freshness. Good persistence and delicately almond finish.

Pairing

Contrà del Tono is a beautifully elegant Valpolicella Classico Superiore and goes well with spicy cured meats from the ancient Venetian tradition as well as medium-aged cheeses, preferably of cow’s nature. Also ideal to accompany first courses based on white meats and red sauces. With typical soups of the Venetian and Tuscan tradition based on cereals and legumes, chickpeas, cicerchie, zolferini and borlotti beans.
